We are proud to use Old Harry from Dorset and the gorgeous Mini Dorset Blue Vinny from Woodbridge Farm. The top tier is the soft Dorset White.

Different Tiers

Tier 1: Baron Bigod
A creamy, white bloomy-rind cheese handmade on the farm by Jonny and the team at Fen Farm Dairy. It has a smooth silky texture and a golden curd, with long lasting warm earth, farmyard and mushroom flavours. It is the only traditional raw milk Brie-de-Meaux style cheese produced in the UK. The cheese is made in small batches, very early in the morning so that the raw milk is still warm, straight from the the cow at the perfect temperature for cheese making. Baron Bigod is a truly unique cheese, its flavours, aromas and characteristics are influenced by the cows milk and the rich variety of grasses and herbs that grow on the land of Stow Fen, completely unique to the Waveney Valley!

Tier 2: Old Harry
Another cheese made by the wonderful team at Chalke Valley Cheeses in Dorset, Old Harry was the first hard cheese to be added to their range. Named after the famous Old Harry Rocks on the Dorset coast, this farmhouse cheddar-style cheese with its craggy rock looking rind is matured for only 3 months in wonderful small 2 kilo truckles, just long enough to develop a lovely complex mild rounded flavour and smooth texture within the natural rind, which should be trimmed prior to eating.
A really lovely and exclusive addition to any wedding the cheese is made using unpasteurised cow’s milk and traditional (non-vegetarian) rennet.

Tier 3: Mini Dorset Blue Vinny
The Davies family have been making the famous Dorset Blue Vinny at Woodbridge Farm in Sturminster Newton, Dorset for almost 40 years. This wonderful cheese takes over 24 hours to make after each morning, the fresh milk is taken from the herd of 270 Friesian dairy cows which graze the luscious pastures of the local rolling countryside.
Once made the cheeses need to be turned by hand every day for the first few weeks and then once a week after that. The cheeses are spiked with long narrow pins to allow air into the cheese which helps the mould grow and flavour to develop. It can take up to 20 weeks for the cheese to mature into the Dorset Blue Vinny that we all know and love.
These cute 500g mini versions come wrapped in beautiful waxed paper and bound with twine to really complete a lovely looking cake. Be sure to order a few more if you want everyone to try some.

Tier 4: Dorset White
As the name suggests, Dorset White is a soft white mould-ripened cheese, moulded in a log shape. Made by the great team at Chalke Valley Cheeses in our native Dorset the thick sculpting of the log allows for a creamier, stronger paste just under the rind when ripe, while at the same time preserving a slightly firmer and tangier centre.
As with their other cheese Cranborne, Dorset White matures into its ‘favourite old cardigan’ rind, darker with patches of other colours. This brings an intensity and depth of flavour to accompany the beautiful softness just under the rind. Dorset white is perfect when paired with crisp dry white wines such as Sancerre and Pouilly Fume.
