Our Sandridge is a stunning cake with a base of the wonderful Colston Bassett Stilton and incorporating the delightful Wild Garlic Yarg and Godminster Organic Cheddar from Godminster Farm.

Different Tiers

Tier 1: Colston Bassett Stilton
The best stilton in the world is our opinion here at The Cheese Wedding Cake! Colston Bassett is one of the smallest stilton producing dairies in the United Kingdom and they make their pasteurized cow’s milk Stilton using traditional methods of hand-ladled curds and animal rennet, which sets it apart from every other Stilton maker. The result of these methods gives Colston Bassett Stilton a more luscious texture, creamy and full-bodied and the flavour, more complex and deeper than any other Stilton produced with vegetable rennet.
It has a wonderful, creamy texture with pale, ivory paste that edges onto amber as it gets nearer the rind and an even distribution of blue coloured veins. The beautiful looking rind is amber in colour, speckled with patches of white mould and the flavor of Colston Bassett Stilton is earthy and rich with a good tang of blue mould and a buttery finish.

Tier 2: Wild Garlic Yarg
This wonderful Cornish delight is made to exactly the same recipe as the traditional nettle wrapped Yarg. Cornish Wild Garlic Yarg is instead wrapped in the pungent wild garlic leaves of Lynher Dairies’ woodlands. They impart a very subtle and mild garlicky flavour and their moisture gives the cheese a slightly firmer texture than it’s nettled big sister. The striking difference in taste compared to the traditional Yarg is all down to the leaves and their effect on the cheese as it matures.

Tier 3: Délice De Cremier
Délice de Cremiers is a rich and luxurious soft-ripened cheese which is made in the Burgundy region of France using the famous triple cream method of cheese making. The cheese curds are first hand-ladled into moulds before cream and creme fraiche are added before being ripened in cellars for at least three weeks, and a further two weeks in the wooden box.
Délice des Crémiers translates to ‘delight of the cheese-maker’ – and it certainly lives up to its name! Under the thin white rind the interior is rich and creamy with a cakey, whipped texture. Beautiful when paired with Champagne and a decadent addition to any wedding cheese board.

Tier 4: Godminster Organic Cheddar
Made in Bruton, Somerset the Iconic Godminster Organic cheddar with its striking burgundy wax coating makes such a brilliant cheese for a celebration cake. This wonderfully creamy cheddar is matured for up to 12 months, at which point only the very best cheeses are selected to be made into the award-winning 2kg truckles. Godminster has a rich depth of flavour without the acidity that is sometimes associated with vintage cheddar, giving it a full and rounded flavour with a smooth and creamy texture.
All of Godminster’s cheeses are certified as organic by the Soil Association and as such contain no artificial preservatives.

Tier 5: Langres
This historic little French cheese is made in the Champagne region, mostly by small dairies as opposed to the traditional farms. The dip in the top of the wrinkly cheese, known as a fountain, is widely used by locals as a miniature reservoir for local speciality alcohols, such as Champagne, Brandy, Kirsch or Marc, and can differ according to the taste of the individual Cheesemaker.
The aroma of the Langres is quite strong, and the texture is smooth and firm. Do not be fooled by its stature. This little cheese has a wonderfully full flavour that is rich with a spicy tang.
