Our Chalcot cake consists of 5 wonderful tiers, including the Old Sussex with its deep, rich and creamy flavour, as well as the opulent Delice De Cremier and White Nancy. We have topped this beautiful cheese celebration cake off with the cute Godminster Cheddar Heart from the renowned Godminster Farm.

Different Tiers

Tier 1: Old Sussex
Made by the team at The Traditional Cheese Company in Stonegate, East Sussesx, Olde Sussex is a naturally rinded cheese which is made to a traditional farmhouse cheddar recipe. It’s open and bouncy texture however, differentiates this cheese from a cheddar, making it a lovely alternative. Olde Sussex has a deep, rich, creamy, yet rather tangy flavor hiding behind it’s wonderful and striking sandstone coloured rind. Beautiful when paired with our lovely woodbridge chutney and some grapes.
The striking appearance of Olde Sussex makes for a wonderful base cheese on any cake.

Tier 2: Wild Garlic Yarg
This wonderful Cornish delight is made to exactly the same recipe as the traditional nettle wrapped Yarg. Cornish Wild Garlic Yarg is instead wrapped in the pungent wild garlic leaves of Lynher Dairies’ woodlands. They impart a very subtle and mild garlicky flavour and their moisture gives the cheese a slightly firmer texture than it’s nettled big sister. The striking difference in taste compared to the traditional Yarg is all down to the leaves and their effect on the cheese as it matures.
The cheeses vivid green striped leaves make a wonderful visual impact on this stunning Celebration Cake.

Tier 3: Délice De Cremier
Délice de Cremiers is a rich and luxurious soft-ripened cheese which is made in the Burgundy region of France using the famous triple cream method of cheese making. The cheese curds are first hand-ladled into moulds before cream and creme fraiche are added before being ripened in cellars for at least three weeks, and a further two weeks in the wooden box.
Délice des Crémiers translates to ‘delight of the cheese-maker’ – and it certainly lives up to its name! Under the thin white rind the interior is rich and creamy with a cakey, whipped texture. Beautiful when paired with Champagne and a decadent addition to any wedding cheese board.

Tier 4: White Nancy
Made by the legendary cheese maker Pete Humphries at White Lake Cheese near Shepton Mallet in Somerset, White Nancy is a beautifully graceful and decadent goats cheese which we make use of on a number of our cakes here at The Cheese Wedding Cake.
White Nancy is a mild and crumbly unpasteurised goat cheese with a white bloomy rind. The cheese has a semi-soft texture and a slightly sweet, fresh citrus taste. As the cheese matures and softens the flavour becomes richer and creamier. One of their earlier creations, White Nancy is named after a local to home landmark in the village of Bollington, Cheshire near where Pete grew up and worked for many years before he made the move to the glorious South West. And how grateful we are that he did!

Tier 5: Godminster Heart
Made in Bruton, Somerset, the iconic Godminster Organic Cheddar Heart makes such a brilliant cheese for a Celebration Cake. This wonderfully creamy little Cheddar is matured for up to 12 months, at which point only the very best cheeses are selected to be made into the award-winning cheese hearts. Godminster has a rich depth of flavour without the acidity that is sometimes associated with vintage Cheddar, giving it a full and rounded flavour with a smooth and creamy texture.
These little hearts really add a wonderful touch for any celebration so be sure to order enough so every table gets to try this wonderful cheese.
